New products: Curie Co. has introduced Curabind, a clean-label enzyme and processing aid designed to improve protein retention, yield, texture and stability in dairy applications, including cheese.
Curabind helps cheesemakers produce more product from the same amount of milk by improving protein cohesion during processing. According to the company, trials showed Curabind increased cheese curd yield across multiple varieties, with Monterey Jack (rennet-set) achieving up to a 10% yield increase, Ricotta (acid-set) up to an 8% increase and Mozzarella (acidified rennet-set) up to a 4% increase. The company also reports that Curabind produced firmer curds compared with untreated milk.
Curabind works in conjunction with rennet, acid and cultured cheese varieties and is designed to fit into existing production workflows without requiring new equipment or process changes. By improving protein retention, the enzyme helps processors increase product output per batch while reducing raw material waste, supporting both production efficiency and sustainability goals, the company says.
In addition to cheese applications, Curabind is designed for dairy products including strained yogurt, milk and sour cream. According to the company, the ingredient can improve stability, texture and shelf life while helping manufacturers produce more sellable product from the same milk supply. |

ENSURE is a non-standard-of-identity ingredient formulated using cultures of Lactococcus, Lactobacillus and Streptococcus species — bacteria commonly used in cheesemaking and widely recognized for their long history of safe use. The cultures are grown in a food-grade starter medium with GRAS-status ingredients and are then impregnated with calcium salts to create a free-flowing off-white powder.
In addition to serving as an anti-caking agent, ENSURE contains fermentation-derived metabolites with bio-preservative properties to help preserve freshness in cheese. The ingredient combines anti-caking performance with bio-preservative functionality in a single product.

The X56 DXD+ is designed to improve contamination detection, particularly for low-density contaminants such as rubber and plastics in medium to large packaged products. According to the company, the system uses dual energy photon-counting technology and artificial intelligence (AI) capabilities to improve inspection quality while reducing unnecessary product rejection, including in applications involving overlapping or mixed products.
The X-ray system also includes Discrimination Pro (AMD Pro) software to improve detection performance in products with varying thickness, density or texture. New products: Multi-Conveyor has introduced two new conveyor solutions for dairy processing applications: a pneumatic-actuated carton cross-push assembly for bundling boxed dairy products and a stainless-steel rotary unscrambling table for handling empty containers.
The carton cross-push assembly is designed for rectangular cartons of dairy products such as cream cheese, butter and cartoned ice cream. The system features three interchangeable pusher face plates that can be adjusted for two-, three- or four-count product groups before transferring them to a shrink-wrapper infeed.
Mounted on a Multi-Conveyor system and calibrated to the size and weight of the customer’s products, the assembly also offers the option to bypass the shrink wrapper so individual cartons can be bulk packed into cases.
The system uses a single-lane conveyor with a cross-push assembly to feed selected product amounts into an existing shrink wrapper. According to the company, this approach eliminates the need for separate conveyor lines for different bundle configurations.
Multi-Conveyor also has introduced a stainless-steel rotary unscrambling table designed to organize empty containers and transfer them into existing conveyor lines. The 60-inch diameter system features bolted stainless-steel construction and allows product to be manually staged onto a loading table before deflector arms guide individual containers into single file.
The rotary unscrambler accommodates multiple container sizes without changing mechanical equipment parameters. The system can handle 16- to 144-ounce empty containers ranging from 4 to 6 inches in diameter and 4 to 11 inches in height. Additional features include a variable-speed controller, 1.5-inch square tube supports with articulating foot, stainless-steel guide rails and adjustable unscrambling rails. The system can support dairy applications involving cylindrical containers or bottles used for products such as whey, milk powder and other solid or liquid dairy products. |

The blender features a shaft configured with 16 radial arms and short-length paddles that move materials through smaller zones over shorter distances, providing greater cutting action than ribbon-style agitators. Two independently driven tulip-shaped intensifiers, also known as high-speed choppers, provide additional shear to break down agglomerates and disperse difficult-to-blend materials.
For dairy processors, the paddle blender can be used for liquid-to-powder incorporation and high-shear mixing applications. The intensifiers provide the mechanical shear needed to break down natural cheese blocks and create uniform emulsions when combined with emulsifying salts and heat.
Designated model HD-24-SSI, the unit is constructed of 304 stainless steel finished to sanitary standards. Its one-piece welded construction, heavy-gauge walls and reinforced end panels allow paddles to pass close to the vessel wall, minimizing residual material that requires removal before cleaning. The flange-mounted agitator can be hoisted vertically for servicing.
